Lazy summer salads

Today, we had some of Andy’s family over for lunch. It was another hot day, so we grilled out again.

We ate way too much. The omnivores had steak. Andy ate his bloody. His dad, “Grandpa Chester,” had Andy throw his steak back on the grill until it was good and dead.

We also had grilled garlic bread, potatoes in foil (cooked with–in addition to olive oil and seasoning–a couple cubes of ice to steam them), plus three salads and another blueberry pie (the one I made earlier this week turned out so well, I made it again).

The salads were all incredibly simple because I was too lazy and it was too hot do do much else. Nevertheless, they were all very tasty. Nothing fancy. Just good summer food. The lot included:
-carrot slaw (grated carrots, grated cabbage, mayo, sugar, onion powder, salt and pepper),
-creamy dill cucumbers (cukes, light sour cream, rice wine vinegar, sugar, dill, salt and pepper), and
-tomatoes and red onions with basil in balsamic vinaigrette.

I wish I could provide specific recipes for the salads, but alas, I was in a hurry and whipped these up without paying attention to quantities.
